My migraine was headed off at the pass yesterday evening (thanks Annabel!) but both my eyes look, well, hideous! When Alex got up, the first thing he said was 'what's wrong with your eyes, you look scary!' Flattery got him nowhere, we still had to go out! I took my camera out with me to retake the photos I lost a couple of weeks ago.

One of them was of the lovely array of mushrooms sold in the market stalls on the main shopping street. The light grey mushrooms in this shot look much nicer in the flesh, they have a blue tinge. Right at the very back are some black mushrooms. I'd love to know how all of these are best used.

I thought these looked great against the stripey background. I don't think the stallholder was too pleased about me taking photos and not buying so I did eventually buy one of these large mushrooms - at great expense! If anyone know how best to use these, I'd be very interested! They are very big, enough to fill the palm of a hand.

In Norway, a neighbour of ours used to make a wonderful, rich reindeer casserole with chanterelles.

I wish they would put the names on these mushrooms!

It's that time of year already?

I tend not to buy pumpkins, I find the flavour a bit sickly - fine in small doses though.

I'm not really sure what some of these are but I'd bet Sainsbury's staff would throw out shapes like these!

If you bought the ones in the first picture; they are called "Steinpilze". You can make a Risotto (out of Arvorio-Rice) with butter and Parmigiano and then put the steamed mushrooms ( steamed in butter, with salt, pepper and parsley) on top! Delicious!

I love those huge portabello stuffed mushrooms, but as I remember someone famous once saying, "life's too short to stuff a mushroom", I usually buy mine from M&S. There seems to be a lot of cheese and garlic in them and they are delicious!
I used to waste a pumpkin every year, carving it to make a lantern for the girls for halloween. I didn't fancy eating the remains! Then a Jamaican friend from another allotment gave me a West Indian pumpkin which was dark green in colour, and he told me to boil chunks with my potatoes when making mash. It was absolutely delicious, and transformed the humble spud. Sadly he died a couple of years ago, and I haven't been able to find them for sale anywhere since.
If the big ones are Portobellos (we get them 4-6 inches across), I cut them into big chunks and saute them for use in *everything*! They're sturdy and hold their shape better when mixed into, say, vegetarian lasagna or something like an eggplant/Portobello/summer squash stirfry. Add meat as desired.

I love your photos. There are so many things that can be done with mushrooms. My favourite with the really big ones is to saute them gently in a little butter, then put one each on a slice of bread (thick, and toast one side in the grill first while saute-ing mushrooms)with a slice of ham and topped with gruyere, then grill.
Grill slices of bread, turn them over
Put on slice of ham, or salami
Mushroom on top, and you can put thin slices of apple in the cup if you want to make it moister, or add another veg. (already cooked, or ok eaten raw-ish)
Then a layer of melty cheese - strong tasting is my preference, but as long as it melts and pleases you ....
It's very quick, and teenagers can make their own!
Your mushroom photos are wonderful Felicity. They look amazing in large numbers like this. I think I remember seeing a tapestry Kaffe Fasset did once featuring gorgeous coloured mushrooms. They really are amazing things.
I still have nightmares from when my mother brought me shopping. Wonderful mushrooms.
